The Muffin Stories...Banana Choc-chip Muffins


I have been craving to own a muffin pan since the time I started baking.. and finally the time has arrived !

I remember how I used to get annoyed when my mom used to stop at the utensil section at every store we used to visit..and now I do absolutely the same..Have you guys observed that as well?

So, the decision was obvious that my next recipe had to be that of muffins and I was looking for a perfect recipe to do my pilot test with the old adage in mind that “the first impression had to be the best impression (I do mean of the muffin pan) ”.

Last week, one late evening I got bitten by the baking bug and quickly googled up some muffin recipes with bananas and that’s when I realized what could be more perfect for a first start than the traditional banana muffins .



BANANA MUFFINS (with and without chocolate chips)
Yields 12 muffins

INGREDIENTS

Bowl 1
1.5 cups all-purpose flour
1/2 cup sugar ( I reduced it from the actual 2/3 cup)
1 1/2 tsp. baking powder

Bowl 2
1 cup mashed ripe bananas (about 2 large)
1 large egg
1/2 cup melted margarine ( Replaced the actual unsalted butter, melted)
1/4 cup milk
-1/2 cup semisweet chocolate chips (Instead of actual 3/4 cup since I wanted to make both with/without chocolate chips)
METHOD
Preheat oven to 350° F/180 C. Line twelve muffin cups with muffin liners.
Mix bowl 1 items in a large bowl and bowl 2 items in another one. Stir wet mixture into the dry one, but do not over-mix. 
I used an ice-cream scoop to pour in the batter into the muffin liners upto about 3/4th capacity and sprinkled few chocolate chips onto only a couple of the muffins.
Bake for about 25-30 minutes until muffins rise and turn golden. Allow it to cool for atleast 15 minutes before you dig into them
HOW WE LIKED IT?
Me and hubby liked the one with choc-chips. But my in-laws liked the one without them. Guess it all depends on one's personal choices. Though next time, I would like to try banana muffins without eggs and with also addition of some whole wheat flour.
